The air is getting crisp, and the Fall months have arrived. With cooler temperatures come new vegetables that are ripe and ready for picking! Let’s talk squash!

Did you know that there are two families of squash? One is the summer squash family, and the other is the winter squash family.  With Fall’s arrival, winter squash availability is booming. Types include acorn, butternut, spaghetti, dumpling, pumpkin, Hubbard, and buttercup squash.  Squash offers much versatility in the kitchen and on the plate. They can be roasted, mashed, grilled, chunked, and baked.

Don’t hesitate to try a new version and experiment with preparation. Squash is high in Vitamin C, fiber, and beta-carotene, as well as antioxidants, so indulge all you want to stay healthy and nourished!
