Summer is approaching quickly, and with warm weather and sunshine come gardens and lots of fresh fruits and vegetables in many color categories. Think of these categories as a rainbow incorporating these colors: Red/Pink, Orange/Yellow, Green, White, and Blue/Purple. 

As local produce becomes more readily available, it is important to be sure you are incorporating all colors of produce into your daily intakes. Each color offers different health benefits and nutrients from food to nourish the body known as micronutrients. Vitamins and minerals fall into the category of micronutrients, and eating produce from every color of the rainbow will help ensure that you are getting ALL the micronutrients the body needs. Try and challenge yourself to eat something from every color, every day. It might be easier than you think. Make it a point to not eat the same items twice in one day. 

Try these easy, quick tips to bring Eating the Rainbow into focus: 

  • Mix up a bag of ready to eat veggies like carrots, celery, grape tomatoes and cauliflower to snack on throughout the day.
  • Try making a fruit salad of all the colorful fruits and having it ready to eat container in the refrigerator, so it is easy to grab and eat.
  • Include different color produce in smoothies, try adding colors you would not typically add.
